Smallholder Farmers

Peñas Blancas represents a collective of smallholder farmers surrounding the renowned Vergara, Lasso, and Gasca family farms. Through its centralized processing hub, the project provides access to advanced infrastructure, training, and improved compensation, supporting long-term sustainability. Named for the striking white stone peaks overlooking the valley, Peñas Blancas reflects both place and progress.

VARIETY

Yellow Bourbon

Yellow Bourbon, a rare mutation believed to stem from Red Bourbon and Yellow Botucatu, was first identified in Brazil in the 1930s before thriving in Colombia’s high-altitude regions like Huila. Celebrated for its high-fructose cherries, it offers vivid sweetness, bright citrus acidity, and layered notes of caramel, vanilla, and pear. Delicate and demanding to cultivate, its scarcity only heightens its allure.

PROCESSING

Mosto Inoculated Thermal Shock Natural

Cherries are harvested at peak ripeness (22–26° Brix) and undergo a precise thermal shock to purify and prepare them for fermentation. A 72-hour anaerobic fermentation is followed by a 24-hour mosto-inoculated bath, building depth and complexity. The process finishes with careful sun and mechanical drying, achieving optimal stability below 11.5% moisture.
