Bourbon Ají, Java

This release blends Bourbon Ají and Java, uniting two of Colombia’s most intriguing and dynamic coffee varieties. Bourbon Ají brings a bright, fruit-forward profile with red berries, tart lime, and tropical notes, while its pepper-like mucilage adds a layer of intrigue. Java elevates the cup with elegant florals and vibrant citrus, stone fruit, and melon for a refined, complex finish.

Mosto Inoculated Anaerobic Fermentation, Thermal Shock Washed

Thanks to shared knowledge and collaboration through Lohas, these coffees undergo remarkably similar processing despite coming from different producers. The cherries first ferment anaerobically, then are reintroduced to mosto—a naturally occurring, nutrient-rich fermentation liquid—to deepen complexity. After fermentation, the beans are washed using a thermal shock process, where rapid temperature shifts help drive flavors deep into the coffee. A final cold rinse locks in these vibrant characteristics before careful drying preserves the coffee’s refined, expressive profile.
