The “natural” process turns coffee cherries into raisins before getting the seeds ready for roasters. Fermentation makes some gnarly flavors if not carefully monitored, so we only work with small landholders in the Yirgacheffe region of Ethiopia that painstakingly pay attention to the fermentation process.
