Varieties: Caturra, Typica, Bourbon, Sidra
As most of Ecuador sits on the Equator, it's fitting that Mitad del Mundo translates to "Middle of the World". Growing at this latitude and in high elevations, coffees from Ecuador are known for their brightness and complexity. Strong and direct sunlight contrasted with the cold, high elevation night temperatures effectively shock the coffee plant each day. This results in the organic acid and sugar content of the coffee seeds to greatly magnify during the plant's maturation process.
In addition, this specific offering is comprised of a natural mutation of the coffee seed called "peaberry". Traditionally each coffee cherry consists of two seeds, but around 5% of the time a coffee cherry will only produce one dense seed instead. When this happens two seeds do not share the nutrients of the coffee cherry in both the growing and fermentation phase. What this means is that peaberry coffees from Ecuador are some of the most unique and rare as both the growing environment and seed mutation amplifies sugar content, acidity, and flavors.
Peaberries will also roast more evenly as they are an oval shape. Energy during the roasting process can then soak in evenly into the seed’s core. The higher density of peaberry seeds also allows us to apply more heat during the roasting process, which speeds up the development time to showcase bright fruit notes. This all culminates in a coffee that is incredibly balanced and sweet while still able to showcase complex layers of flavor that shine through.
