White Peach, Bergamot, Floral Honey

Smallholder farmers around the town of Gedeb in Ethiopia contribute to this beautiful coffee with a powerful bergamot aroma. Upon first taste you will find a dominant white peach note, but as the coffee cools a floral fresh honey flavor develops with a tannic mouthfeel.

Banko Gotiti is sourced from METAD, a third-generation family owned business with a rich history that began after World War II. METAD is managed by Aman Adinew who returned to Ethiopia after many years working abroad because he wanted to make a difference for his family and community. Through Aman’s leadership, METAD has strengthened the local community with employment opportunities including a workforce that is over seventy percent women, educational opportunities including university scholarships and sponsorship for a state-of-the-art elementary school with more than 700 students, and healthcare for employees. 

This specific lot comes from the small communities surrounding Gedeb where elevations reach some of the highest growing altitudes for coffee in the world. Combine this with Gedeo’s terroir advantage of searingly hot afternoons with zero humidity and crisp cold nights help keep surface moisture off the coffee parchment dry as well as congeal the sugars overnight for a slow osmosis and a well-protected coffee seed. The high altitudes contribute to the coffees bright acidity and fruit notes, while the climate creates crisp, clean layers.

Due to the high elevation of this coffee, we felt it was necessary to profile this coffee with a fast, high energy roast. Before the high energy heat application, this coffee must spend a significant amount of time soaking up low heat energy to ensure the dense seed is capable of absorbing energy uniformly. We then experimented with various Maillard reaction and development phases of the roast to find the tiny window where acidity, fruit and body are at their ideal peak allowing this coffee to shine like it should.
