Third generation coffee farmer Danilo Salazar was raised on his grandfather Cristóbal Salazar’s namesake farm. As a child, Danilo would play among the coffee trees before learning the family trade of how to nurture them. Danilo now works alongside his son Pablo Andrés to collectively push forward innovation and quality. The care the Salazar family has given to their land for over 70 years is shown through each sip of this beautiful coffee.

Through Danilo’s tenure, he has been working diligently on perfecting different coffee processing techniques. This coffee represents one of these processes, specifically it is called “red honey”. While there’s no actual honey that’s used in the process, the term refers to leaving some of the sugary mucilage around the coffee seeds while they dry. Calling it “red” refers to the amount of fruit mucilage left. Black honey processed coffees will have almost all of the mucilage left, while a yellow honey has about 50% left. Red honey has around 80% left. Since this mucilage has a high sugar content, more mucilage results in more fermentation and more fermentation will provide more fruity flavors in the final cup of coffee.
